This places a single fully-grown tile of grass, which can spread overnight (if your animals haven't eaten it of course)

So buy or craft a bunch, and scatter them a few tiles apart in the enclosure

I'd recommend 3-4 to start and just space them out a bit

I like doing this right before a forecasted rainy day. I heard, but am not certain, that rainy days make grass propagate an extra time overnight. More importantly, the animals will stay inside that day so the grass gets another another day to spread

Yuo likely won't get a full field by the end of fall. But if you leave the grass over winter, once spring comes any grass will kind of explode from that spot.

No, because grass makes them happy and elevates mood to max. This can affect product quality and size.
Also, they get friendship points from eating grass, none from eating hay. It stacks with petting, so you can max friendship faster if they eat grass.
Once they are maxed, the amount of friendship points they gain from eating grass is less than the amount they lose from not petting them. Grass acts as your de-facto auto-petter before you get auto-petters.

At a certain point you're just better off buying hay than trying to keep up with Grass. Using the Winter->Spring trick is a good way to save on hay and get extra friendship if you still need it. But once they are happy, there's not really any benefit in worrying to much about grass if you can't keep up.

If you only have a few animals, the grass will naturally out-pace them eating it anyways.

what i do is i have a section of my animal pen that has some grass starters under fences to spread it, then i have other grass patches on my farm that i scythe for hay every now and then

Hay and grass starters are the same price. You buy a load of hay: when they're done with it they're done. The grass starters will slowly replenish and give you more feedings over a period of time and that money will stretch longer.

It's really not worth stressing about 'free hay' from grass if you can use the space for something else.
A nice field of grass for your animals does look nice though, but even that also has an 'at a certain point' thing where you can get too many animals to keep up.

There's apparently a handful of farms out there where farmers will hand-infest tree roots, then it's about 7 years to get a product
