DO NOT do this. Only clear what you need for your crops and buildings, and let the rest go wild. You can get a steady supply of hay by scything grass in the wild area, leaving a few tufts here and there and letting it regrow. Likewise with trees, you can cut a bunch for wood, let the seeds from the trees fall where they lay to grow more, or pick them up with a tool for replanting somewhere more convenient.
The only things you want to clear are weeds and debris, like rocks and those little logs.
A clear-cut farm may look neat, but it gives you absolutely nothing and is a waste of space.

You don't really need a fence. They don't wander off in the sense of getting lost or running away. They won't destroy your crops. Put the coop somewhere they have access to a lot of grass and leave them be. Leave the door open and they'll return to the coop/barn at night on their own.

Yes, by all means scythe it all away and don't let that hay go to waste. And grass will spawn next Spring. You can make even more spawn in by placing a few scattered grass starters on the last day of Winter, and those will explode like 25x the growth on day 1 of Spring, a LOT of grass.
