They never leave the farm, but having them enclosed keeps them closer to be able to be pet each day without roaming the whole farm looking for them. They can also be annoying if they block you.

Botanist makes all forageables you pick up iridium quality if you go the gatherer route. You can always just switch to forester later in the game if you want more wood and switch back once the money to switch doesn't really matter as much.
