There is 8 hardwood stumps that spawn on your farm every day. I chop them every day. I also grab the ones in the secret woods. I started planting the seeds everywhere I could. For a while my farm was more of a tree farm than anything else. But I had PLENTY of wood to carry me through the first winter.

Don't worry ! You can cut them down early, you'll just get less hardwood and I think it's less likely they'll drop seeds again if they arent full grown but I'm not sure on that one

Blueberries usually people just sell them all, since they don't really make much processed for the time it takes. If you're on PC with 1.6, I really like using ||Dehydrators for Blue/Cranberries, since they get through a lot of crops in a short amount of time||

Uhhh... not sure what farming profession to choose. I've honestly neglected farming quite a bit, having only few crops and no animals.

I recommend growing the coffee to use it, drinking some will increase your running speed and you will zip across maps. If you get the expresso recipe (it's 3 coffees combined) you can run faster for longer. Maybe growing from 3 to 9 coffee plants indoors can do wonders for running to the beach or cave and back.
