Trick question, the best money in the first spring is actually fishing. You still wanna grow a lot of crops for Farming EXP to learn some important blueprints, but you get your real income from catching and selling fish

It takes six days and 12 energy spent watering for ~100G from potatoes
It takes less than an hour and 8 energy to catch a fish

For beginners, the mountain lake is a good place to try your hand. Largemouth Bass are worth 100G without even any quality modifiers.
Once you're really confident, you can challenge the river in the rain during spring and fall. Catfish are a difficult battle but worth twice as much.
