Kegs are most profitable (3x value) so use those if you have time! If I have to choose which crops to process, I usually choose the highest value one (such as turning starfruit into wine and selling blueberries)

They have the highest gold/day of all the spring crops and are multiharvest. You also have the option in future years to buy extra during the egg festival and plant them on the 1st of next spring to get even more harvests out of them. Jarred vs kegged is pretty close, if you have a lot of them to process you could do either depending on what else you have. Jars are much faster to process though.
