I'll tell ya this much about Winter fishing
Sturgeons are in the mountain lake, and they bite until... 6PM or 7PM, I believe. They're worth a lot.
They're pretty strong, but a Trap Bobber (easy to craft, requires the Iridium Rod to equip them) makes them much more manageable

For several items, this is not worth seeding (e.g. for Starfruit, it's still better to just buy more seeds)
