• cc works like a tutorial for players, it shows you the mechanics of the game, like how this specific fish only appears in this season, in this weather, at this specific time window, etc.. it also helps you plan out your crops, calculating the day as when the seasons change, your crops die. Animals raising is also encouraged in this route, as the animal bundle requires lotso animal items (and the tricky truffle in the bulletin board bundles) It gives you tasks to complete and by the time the cc is completed, you'll have a pretty basic idea of how the game works.
• as for joja, it's pretty much an "experienced players" route imo, since you'll only be focusing on making money and cash. which if you didn't do the cc route, things will be a little harder to figure out.

• personally, ||with the new update, mushrooms have lost quite a bit of its value||, but i still choose mushrooms because it's a pretty decent energy source ||it also gives you a free dehydrator that costs 10k for the recipe at pierre's and requires you to get to floor 80+ of the mines to be actually able to craft it consistently||. It can also help you with the fall foraging bundle and the special foraging bundle in the crafts room!
• but.. the fruit baits are good if you don't think you can plan out the fruit trees, which can be difficult for some. still, it's pretty good for the cc, fruit trees' fruits aside, it can also give you other seasons' forageables ahead of time, in the crafts room bundle also (its main appeal is the bulletin bundle which requires an apple and a pomegranate, also to give you extra help in the artisan bundle)

personally, i don't think it's very hard to plant the fruit trees by yourself, it just needs you planting a fruit tree of the next season in your current season
