Sheep start out pretty bad, since they only give wool every 3 days, but once happy, and if you switch to Shepard perk for periods of time, they become one of the best animals.

If you're still early game, and just looking to get animals for things like CC completion, skip sheep for now, but consider them late game when you can make more buildings/buy more animals regularly.
