Getting back to answering your very valid question, and adding to what David said, sturgeons in a fish pond would be a very good idea. At some point you'll also want the caviar. And caviar is tied for the third highest-price fish roe, right behind lava eel and blobfish.
Keep in mind that fish ponds can be a lot of fun, and I recommend them. But you won't get rich off of them.

I don't think there's a "best" one - it depends on what you're trying to do. Pine will give you Pine Tar, Maple will give you Maple Syrup, and Oak will give you Oak Resin. Pine Tar is the fastest - producing every 5-6 days.

Just because you and I can make 35k in one summer/fall harvest doesn't mean everyone can. My first playthrough I had 10k in pocket in winter year 1 and felt rich.

If you have a lot of empty areas in your farm just plant grass starters everywhere and cut them whenever there's too many. Do remember the growth rate is significantly faster when the seasons are changing.
Also grass can't spread on "grass tiles"
