for fall crops you do, for quality crops you need 5 gold star pumpkins if it's not complete yet and you want it done. But it's your choice on when you do. Cranberries is also a low maintenance crop, you plant it and then get to harvest multiple times and ship them off.

They're a decent alternative or can be done at the same time as growing crops if you want. But they add the requirement that you farm wood and fiber at the same time if you're making a lot. They do make good money though since they're worth 500g per sapling.
