Fish ponds are rng based. The more fish in the pond, the greater chance you get something every day.

The max capicity of a fish pond is 10, but you start out limited. Once you reach your current cap you'll eventually be given a quest by the sturgeon to give it an item, which increases its cap.

So for now, hope you get something, and wait for the quest from the fish to increase its capacity.

Once it's fully populated, the loot is more consistent.

It wont produce caviar, a fish pond with sturgeon will produce roe in which you will need a preserve jar where you place the roe to produce caviar.
