you can get them at literally any point! my first playthrough i didn't even build the coop until end of spring year 2 because i was focusing on crops, mining, and fishing
the only thing it'll do is make you take longer to finish the community center and be able to cook certain food, which is no problem! do what you want at your own pace and have fun with it!
