Well, it doesn't have to be something you're responsible for, but usually there's not much things you can buy off that has a star (higher quality) in it, so it'll most likely something you've made anyway.

No. Rotting is not a thing in-game. But they wilt after a new season, or other circumstances. Leaving them there would just do... nothing, unless natural disasters like lightning, or weed spreading, or crows eating them.

The only thing worth getting from the fair are the rarecrow, the Stardrop, and... that's about it, I think.

They're usually sold as cranberries. If you have nothing better to process, then go ahead and keep processing them. But higher value crops are better for Kegs/Jars. If you have pumpkins, use those instead of cranberries.
