They won't. If you start the upgrade the day before it is forecast to rain, you will lose at most a single day of growth for your plants, which is not usually the end of the world.

Fishing is a bit tough at first, but automatically gets easier as you level up. The challenge remains though, as some fish are more challenging to catch than others. The best plan when starting out is to get the training rod early, and use it until you have levelled up to say level 3. Then switch to the fiberglass rod and start using bait (bought cheaply from Willy's shop), which makes fishing much more profitable as you don't have to wait long for fish to bite (this rod costs a bit but you can cover the cost by selling fish - it will cost less than a day's catch makes you)
