Most things increase in value with processing, so if you have the jars/kegs, definitely go for it. There are a few things that aren't really worth processing, but they are really just a few (I never process salmonberries, for example). Making kegs and jars does cost a lot in resources, though, so I'd focus on processing low-quality crops and shipping the gold ones.

there's one thing that helps me - i try to divide my farm into smaller sections and work on those, gradually. planning it out, for instance - what do you want to have next to your house, and then moving to other areas when the previous one is complete makes it more doable in my experience
