It's honestly better to save your ore and work as fast as you can to get the quality sprinklers. Just work down the mines, ignoring ore and stuff and just breaking rocks trying to get down, and while you're at it plant as many crops as you feel comfortable watering daily and before long you'll have quality ones

Really it only matters to get yourself the quality sprinklers. You should grow profit-wise crops all the same, but having a plot set aside to get you enough xp early to earn quality sprinklers will save you a big headache later. The sooner you can stop hand-watering the sooner you can make money in other ways.

It depends on your playstyle imo

If you're starting out new my guess at advice would be to start with standard if you're not sure

Forest farm is well balanced if you feel overwhelmed by other farms that are larger in size
