In certain conditions regular trees can grow to maturity through the winter (with use of - spoiling for level restricted recipe - ||tree fertilizer|| )
In general regular trees have 5 stages of growth, and each day they roll a 20% chance to reach the next stage - stage 5 being maturity. During winter regular trees outside the farm (so in the forest etc) will stop on stage 4, and IIRC trees on the farm will omit this roll altogether
