You can, but it involves changing your save file names. Find your save files folder. There should be two sets of files, one with a ".old" suffix. Delete or move the other two, then rename the ".old" ones by removing the ".old" suffix and the dot (period). Then restart the game and you should be at the start of yesterday.

Because higher quality fruits have a higher value, and wine is 3x base value. Doesn't mean you shouldn't make your fruits into wines. It does mean that a good starting strategy when you have very few kegs would be to keg the normal quality and sell the gold and silver quality fruits.

Coffee seems awfully easy from a glance, you get a lot of coffee and it harvests very frequently

Everything comes out of the keg regular quality, regardless of the quality of what went in. With casks, the profit per day is based on how long it takes to age from regular to iridium. What makes cheese so good to age is that is only takes a week to go from gold quality (which you get from large milks) to iridium, whereas wine takes two months to age from regular to iridium.

Figure out how many pumpkins will be growing and figure that a jar takes 3 days to process a pumpkin, while a pumpkin takes 13 days to grow. I'd estimate about 1 jar for every five pumpkins, maybe one for every 10 pumpkins if you want to keep them running all winter.
Figure 1/3 more jars with Deluxe Speedgrow, which will give you an extra harvest per season.

More jars than that is fine, too.
