Stockpiling money early on, especially in Fall, might not be the best idea. Spend that money on things that can make you more money, especially in Winter. Farm buildings and their upgrades, more animals, maybe more artisan machines like jars and kegs if you have them yet.
If you are really trying hard at succeeding in this game, you'll probably spend a lot of the time in the first couple of years broke.

And there is no distinction with water sources

Just use your watering can as always. Some crops will take a long time to grow

However you don't need to water rice shoots when they're planted adjacent to water sources, creating irrigation. Rice and only one other crop is the exception
