Location and time are the biggest factors. Going to sleep at different time intervals can change the villager running the stall. By time intervals I mean 1 hour intervals. For example between 7-8AM. For location its based on where you sleep and not the tiles. Example of locations would be bus stop and the farm. Sleeping at different tiles at those locations does not change the villager

More than half your farm is just doing nothing right now. You could either put more coops and barns in it (and fill them with animals of course) or prepare a massive Ancient Fruit operation.
Kegging them is ideal, but you could also jar them (needs only about half as many) or even dehydrate them (loathsome as it is to do it to something so valuable)

Tomorrow, continue clearing the mainland field and look for places to put sprinklers. And do so if you have them.
Continue this on Wednesday.
(You can do Special Orders or Qi quests meanwhile ofc)
Thursday, grab DSG and Starfruit Seeds and plant them all over GI.
If you don't have an oak tapper grove, you'll want to plant one now (fertilized ofc since it's winter).
Once GI is planted and the mainland farm is cleared, you can spend time collecting materials for more kegs, jars, dehydrators, and even iridium sprinklers.
If Linus' trash quest spawns before the final week, you can do it and pre-plant Fiber Seeds on DSG now, ahead of Spring, to further reduce or even eliminate the Day 1 rush. Just leave it in the soil until spring breaks, and easily scythe it away to plant Rhubarb.

After one round of wheat and two rounds of pumpkins, there won't be enough time left for a third round of pumpkins before winter. Could try fitting more wheat in instead.

The insane part being that you need to get, for all the legendary fish and all of Qi's descendant legends, you need to ace catch them all with Challenge Bait, so you can get three of each, one for the base version, one to make specialty bait, and one to smoke, and then reset until on all of those catches, you also open a chest, and land Pearls for at least 2 roe, one to keep, one for aging
