Sturgeons are noteworthy because of caviar, but several fish (most notably Lava Eels and Blobfish) are significantly more profitable... though still awful income on a per-tile basis.

It'd be Challenge Bait if you could get perfect catches literally every time. Perfect conditions for Lava Eel Bait just under double your bite rate for Lava Eels. Pefect catches with Challenge Bait triple the amount you get.
