Alright, so... jellies have a seeded-RNG chance to replace trash catches. The seed increments whenever you catch something real (fish or jelly), and not trash or seaweed or whatever.

Ginger Island South, and Pelican Town Beach In Summer, have only fish that are too difficult for the Training Rod to hook. So you drop the Training Rod's bobber at your feet, see if you catch a jelly. If you do, just drop the bobber at your feet again; repeat until you catch an actual trash item. Then switch to your real fishing pole and cast normally until you haul in a real fish, and then try the Training Rod again.
The chance is multiplied with Luck buffs from items/food (but not from daily spirit luck)

Scaling down inherently hurts mushroom log efficiency, because any mushroom log within 3 tiles of the edge of the farm has reduced efficiency

You can also buy the queen of sauce cookbook after getting 100 golden walnuts which teaches you all the remaining queen of sauce recipes

You use them to unlock specific features on the island, once you reach 100 total walnuts you get a chance to buy the book from the bookseller
