for speedrunning badge the best advice I can give is just go fast, only really cook the marshmallows/glizzys and never take too long to start climbing
for example you could do the map once as a practice round and the second time you do it you'll know a rough estimate of where to go so you can stick to that route and get the badge that way as you'd most likely end up doing it faster than on first attempt

You can't place the cannon at the airplane crash anymore ever since they raised the walls, but you can place it on a hill at the beginning of the Shore to get over the walls
Angle the cannon 3 ticks upwards pointing it towards the campfire smoke at the top of the hill and you should get it, if your character happens to spin wrong though you'll probably mess it up so it might take a few tries lol
