Stay on the left side; you'll run into the capybaras and an easy canyon crossing. The mesa felt kind of easy today, there were a lot of natural staircases on the inside, keeping out of the sun. Don't get greedy once you're out of the canyon, I nearly died from the heat trying to cross an open area in that spot.

u cant have more than 10% heat at all while in mesa, i'm p sure. i'd advise playing on tenderfoot so you're not on a time limit and to only travel at night primarily unless you're shielded from the sun in a cave

I mean, I'd consider using a mod menu to put yourself back where you were. Is your game, only has to be as frustrating as you want it to be. Even just top of the mesa without any items, if you want a penalty. Saves you the trouble of running the same route you already know.
