If it came down to eating a part of myself, it'd be... hmmm... something that I could regrow with some recovery time and something that can be actually eaten by humans. Perhaps some muscle cells grown on a scaffold created by denaturing a spinach leaf or two, then using it to grow an artificial heart of myself. I'd use a lime gremolata and grill it to medium rare.
