Things I have tried:
Updating graphics drivers
installed the direct x directly from microsoft
disabled windows defender
removed my audio drivers and reinstalled them
(If anyone has any idea what's happening please help)

Your problem is

Log show that you have a Nvidia GTX 1070, but should probably still try to use the integrated Intel® HD Graphics 530
You should try to enforce Nvidia GPU with Nvidia Control Panel in Manage 3D Settings

I'm having the same problem. Last night it worked normally, today it first launched, but the image didn't load when starting a game. Now I click the play button in steam, it becomes the blue cancel button, then about ten seconds later it just goes back to the green play button. I've tried the above remedies. With both normal and alternative launch options

The error message, by default its in the console.txt file in your User/Zomboid folder

Try going to the C:\Users\YourUserName\Zomboid folder and edit the options.ini file.
In that file, edit the fullscreen=true line to fullscreen=false
Then try launching the game again.
