Seems like a graphic issue
Try downloading and installing the latest drivers from this site:

I already downloaded, installed and restarted the PC, I tried to run project zomboid but I still have the same problem, the most curious thing is that yesterday I opened, and well it was normal as if nothing happened. Today I tried to open it and I get the same error. Help please :c

Can you share the logs again to confirm that the driver was updated correctly?

I think it has something to do with this.

Try going to the C:\Users\YourUserName\Zomboid folder and edit the options.ini file.
In that file, edit the fullscreen=true line to fullscreen=false
Then try launching the game again.
