OP prefers a dedicated server, and I'd understand why.
I'm ok with just having a running multiplayer game because I prefer to play with a static 2/3 people at the same time each night and to not play solo (I don't like to progress the world clock solo)
I play games mostly every night from about 9pm onwards. I don't play Zomboid every night but I'd be up for some regular play. I have a friend who would also be interested in perhaps hopping in/out of the world on occassion.
I imagine we're looking for similar things. Just persistent people to play long term and not get bored.
