my hot take: Animals are carriers of the Knox virus. It's in their bodies, but they're immune to its effects. 

The virus went airborne. Infecting literally everything and everyone. Including the wildlife.
But somehow animals aren't zombified. Makes sense they'd be carriers.

Some unlucky percent of the human population end up carriers too, unfortunately these humans aren't fully immune, unlike animals.
I believe this is because of the brain. Some brain protein or whatever that only humans have. Or perhaps something related to the biology behind us being sentient?
Basically the virus only zombifies humans for a reason.

Since animals don't have 100% infection, they can't spread it through bites.
But humans can and do.
Basically the infection has to reach a certain stage before bites become fatal.
Which would also explain how the airborne version isn't fatal to the human carriers.

Here's another hot take:
It was released by mother nature. But created by man.
I believe the Knox Virus is a creation of the flora of the area. There was a chemical leak. And in order to adapt to these chemicals, the plants around the site altered their pollen. Perhaps as a result of the materials the chemicals were made from? Could also explain why it went airborne globally so fast. The infected pollen would spread through plants like wildfire.
