Represents the enchantment glint override of an item (Requires Minecraft 1.20.5+).
Overrides the enchantment glint effect on an item. When true, the item will display a glint, even without enchantments.
When false, the item will not display a glint, even with enchantments.
Note: If no override is applied, will return null.

How would I do this with an item that is added you your inventory, like if I had this line give player 1 dirt named "&6Enchanted Dirt" with lore "&aObtained in the Overworld"

have you tried looking at the expression a bit more?
set a variable to your item, then set glint override of variable to true, give player 1 of variable
