what do the vars contain?
setting a variable to a string should persist
inventories, entities will not
can you send an example? is it maybe a memory variable?
maybe also send sk info too

Outdated addon galore
never heard of Ersatz but that was last updated 7 years ago on spigot, i recommend you remove that
your addons are really outdated, update them
Delete Skellett, SkQuery and Ersatz
I would delete skquery, its known for being buggy, good chance its the issue
they tend to break things
I recommend {level::%player's UUID%} so that you have a list ({levels::*}) of all players' levels
what value are you setting this to?
like are you doing set {level::%player's uuid%} to player?

Idk if it works, but not only the level variable, but a variable boolean is not saving
Now it's really weird 😭 Instead of just deleting the variable it looks like it just keeps resetting to 7
