The chunks of my existing world were obliterated, seemingly because the game didn't save them because I didn't edit them in any way.
They've now been replaced by chunks that are in the same spots when creating a new world with the same seed.
It barely feels like the same world anymore because everything else is gone. It does make for some cool scenery at times, though.

I think that's just something that will happen unfortunately
The game doesn't save unedited chunks so changes to the world gen will do this

Unfortunately yes, it will happen whenever world gen changes
Only option is to maybe do it like Minecraft Java and save chunks you've walked on?
But that takes up a lot of space
Minecraft Java also has a way to smoothly transition the biomes and terrain between old and new chunks. It would make this look less jarring.
I think it isn't quite possible the same way because of how generation works
Im assuming they can smooth it with the multi pass system, which lucid blocks doesn't have
Another potential solution it to just keep world gen the same for the version of the file? But you wouldn't get new biomes if you updated
I don't think that would too much of an issue anyway, minecraft only started working like that in 1.18
i wish that kinda didnt get rid of the cutscene blocks though 
or the pendant could somehow fetch a new block location so it doesnt end up being trash
I think that at the very least a few chunks in an area around spawn should be saved by default. If someone has very bad luck they could fall into the abyss upon respawning due to one of the Yume Nikki-esque road biomes generating on top of it.
