I know that micro win creates a custom iso but I was wondering exactly what features and applications it removes?

It makes Windows less bloated and it makes Windows use fewer background services/processes making it snappier.
You also don't need to use a Microsoft account to install Windows.
I hope that at least explains it a bit.
