Amumu is a solid choice
Simple to play and has suprising good dmg at sunfire demonic, and a simple ult can win a team fight

Well Diana is already a low elo stomper
So Im not sure why you would want to stay away from her knowing how strong she is in the JG even with nerfs
But Ekko also plays the same as Diana
So you can go with him, easy to learn and can hyper carry
Any jungler works in low elo; it all depends how good you are at the game

All "champ for x elo" questions are answered the same - gameplay > champ. Understanding the game better will always be more beneficial than picking strong champs. You'd rather have the 1k games teemo player on teemo jg than 5th game graves.
Any champ works. Good champs to learn in general have high skill caps and fundamentals applicable to other champs. i.e. Kindred, Ekko, Riven, Sivir, Nami. Practicing champs like Draven, Fidd, Ivern, Heim is perfectly fine, but trains gameplay unique to those champs.
The goal is to learn the game. Playing a smaller champ pool is preferable to minimize variance across games. Pick a few champs and play a hundred games, paying attention to what works and what doesn't. Record your first few games and watch them back at the end - you'll be amazed by how many mistakes you can now recognize and how far you've come along.
