There is no simple answer to that. We don't really focus on any stat, we still prioritize higher ilvl gear.

You just have to sim yourself.

Currently I'm running all haste gems with one single crit enchant.

If you're trying to be super tryhardy and the cost of the base isn't too much (only 50k for a rank 6 on my server), you could always craft on helm as well for a little more dps. For me it's like 75 or so dps gain crafting obidience on helm
