Ambush is currently only used from blindside/sepsis proc, not from stealth.
The reasoning is a little complicated, but the most important of them is the difference in combo points on crit (up to 4 vs 3).
Some other factors to consider are increased poison applications, blindside, and doomblade. This is true for all talent combinations and legendaries.

I generally just tab target. It seems to target mobs you haven't targeted yet, and the camera matters a bit, so you have control over it once you get the hang of it.

Mouseovers work and some people use them here. The only real downside (or upside depending on the situation) is that you won't autoattack that target, so you'll apply bleeds and only bleeds, not your lethal poison.

I use Mouseover for Serrated Bone Spike, Kicks, and CC but not bleeds.

2. Aoe finishers (Powder) have the same proc rate, but only do damage to one target, seemingly randomly selected
3. Slice does not proc it currently. This seems intended as slice self-buffs and doesn't have any damage associated with it
4. Only one rogue is allowed to tag any given enemy. If you have two rogues, the first one to apply the debuff tags it, giving all procs to that person. The other rogue will not apply the debuff, nor get any damage
