I have been running Sims to see my top gear and I'm trying a combo of rank 2 EV paired with either rank 3 twilight devastation or rank 2 Infinite Stars..... Sim says IS is better but when playing with them in game it feels like TD procs more and does more dps in general

First 2 toxic blades are fine. After that and vendetta is over I always miss toxic blade/envenoms because I have to refresh rupture. Then wait for energy to get more cp to envenom etc.

Okay, logic question. Why would it be better to let TB have a non-nature GCD and fall off (losing say, 1-2 seconds of TB value), than to wait 2-3 seconds to refresh bleeds prior to using TB? The reason I mention double dose is that TB increases all nature damage done to the target. I have to imagine the value of that scales up over the course of a long fight, assuming you only have an instance or two of this occurring. What am I missing from the equation?

That's not completely true as you look at ilevel parse and you won't rank the same as someone with corruption on the item pieces where you would have no corruption no matter how good you play. There is of course a grey area but assuming both play excellent the one without corruption will rank lower. So they do matter

Hey guys, I have kinda complicated problems with simming right now. I have pletny of the corrupted gear and the same amount of azerite. Right now it shows me that the helm I have right now(465ilvl NP+Shadow of Elune) is worse than the Slithering Loa(450ilvl DD+swirling sand). It also shows me that Fish mythic chest(450ilvl TTK+LTTE) is better than 460ilvl chest I'm waering(NP+TTK), but... they're only better when used separately(Loa+Fish isn't higher than Loa+460ilvl chest or 465ilvl helm+Fish chest). The second thing is that I've got 445ilvl Azshara, which sims higher than the haste trinket Vita-charged titanshard(460ilvl). My second trinket is 450ilvl ashvane coral. Anyway, there's also another problem. It shows me that I should gem/ench everything into mastery with the gear I have right now, but whenever I do that and try to get right pawn scale it shows me that haste/crit/versa is higher than mastery(?). By thte way, keep in mind that I still dont have rank 3 breath essence.
I have currently no idea, what should I do right now. I feel that I have not enough iterations to sim everything right and there's somewhere a better combination of gear than I could sim. There's also one issue - Im starting to gear up in heroic raids(had a few weeks break)... so I was wondering if it wasn't better for me to just keep playing and gear up a little(like getting the carapace dagger with the corruption? Do i go through the base rotation then let my energy "pool" back up to near full? What numeric value should I stop pooling my energy at? as an example, when you finish with envenum there is a short window where your mutilates will do more dmg, so rather then envenum with very low energy and lose out on that window, you can pool your energy (without capping) such that you can envenum and then ideally double mut within that window of extra dmg

once you put those mut's into the window there's no real reason to envenom asap, so you hold that envenom until you might overcap energy
that way you'll always have enough energy to refresh bleeds and burst in TB

Sin is a a low APM spec. Pooling energy is mostly concerned with your TB window. You pool energy before TB to fit as many Envenoms into the TB window as possible.
You want to avoid reapply bleeds mid TB window as those globals/energy/CP could be used for Mutilate and Envenom.
You still want to press TB on CD. Pooling requires correct timing of energy and bleeds.
Never cap on energy either.

Always press TB on CD. You are always only going to get 1 TB window per Vendetta anyway.
It is preferable to line up TB and Vendetta as you can take advantage of the increased energy from NP, but still just press TB on CD.

once you put those mut's into the window there's no real reason to envenom asap, so you hold that envenom until you might overcap energy
