In those massive pulls, I feel like if I wait to have every bleed active before popping CDs, the adds are already dying by the time I start my burst.

Apex talent more often than not is kinda minor in actual aoe situations, you would want to drop the buff at max stacks if you were to struggle with energy, just as you'd do in ST tho

Can I make this work in random battlegrounds/low level 2's or Delves and low level mythics? I play fairly casually and am not into raiding or rated arenas etc.

Whispyr will give you a better answer but deathstalker to my knowledge sims slightly better in some situations but it's just hard/annoying to use. That may not be the case after some recent updates, though. It is definitely usable, just most people don't like it very much in its current state.

It certainly won't be bad enough to have anybody be like "oh brother, this guy stinks."

So unfortunately Blizz has painted themselves in a bit of a corner where old combat players are super unhappy, but you can't change it because outlaw players would be super unhappy... Gotcha. Didn't play then. I will say, it's an edge case for me. It's single target in an m+ build. I have no issues in pure st builds. I don't understand how pooling on 80 stacks is enough in keys. Edit: Feels as if I'm missing something

I'd assume that more damage on adds = higher overall damage, since g1 goes two times and g2 only once, plus timer allowing cting your imp garrote from boss to the blobs and carrying that over to the big guy
