This is just not entirely true, this opinion is just repeated by everyone in the community because it's easier to mimic then to understand why.
BiS lists are misleading for players who think the gear is on the lists are the only possible setup and aim for those particular items ignoring everything else which in the long run hurts because that's just not how stats work. Which is why sims exist.
The issue with BiS lists is that people use them wrong. People don't read, they look at the list and ignore all alternatives and most importantly the information as to why each piece of equipment is important. But they are still a very valuable source of information.
Trinkets are different because you can quantify how each one is performing with your class so its good to know not only the best two but possibly even the top six. The same argument can be made with weapons.

Ok let's take Necks for example. Currently the only Crit/Mastery neck vailable is a BoE. The only alternative is to craft one thats crit/mastery. Most people will see the "stat priority" of the Assa spec and say well Mastery and Crit are my two best stats so I guess since I can't farm the BOE neck or want to spend the gold to buy it. I will have to craft the neck. However the Neck might not even be best in slot.

Haven’t bothered looking at trinkets as I’m expecting a tuning to go through and change values a little so I’m relying on big papi Vhispyr to guide me when I log into PTR (I haven’t since week one)
Seaforium was good and priory can be, but it’s just completely outclassed by the on use and raid trinkets. Trinkets and cantrip items are good to have a list for. Outside of that, your gear and what’s best in the moment will fluctuate a bit. No point in a bis list because you’ll just constantly change. - Energy just is low on the spec there's nothing to do about it
- Super Min-Max stuff includes avoiding the auto proc of tea (less than +0.2%, tea/shiv macro is optimal)
- Refreshing Envenom in pandemic instead of spamming it (mostly relevant for m+ without TTK, can be up to 0.5%)
- Otherwise nothing matters. Pooling before kingsbanes isn't important because of tea lining up and deathmark giving a huge surge of energy

Running out of energy in single target is completely normal, intended design of Assassination. You want to be playing for the highest uptime on Envenom, and not blindly spamming away all your energy. Rapid Injection, Sanguine Blades, and Vicious Venoms all play into this gameplay.
- No, haste will not make this feel noticeably better.
- 10% haste only contributes to around 2 actions per minute
- You should be playing for envenom uptime in single target
