Just to add to this, once you get a covenant to 80, you can purchase an item from a vendor next to the oribos flight master that will rank up your current covenant to 60, it is also account wide so you only need to get a cov to 80 once per account.

I wouldn’t say the main story quest is longer than any other expacs, but there are longer quest lines after the main story for each covenant as well as torghast. But you only need to prog the current cov and torghast/chains of domination to about half way in order to actually unlock ZM and Korthia. ZM is the go to for farming anima, and if you still aren’t 80 by the time you finish the story you can run the raids as each boss kill normally gives 1 covenant level.
