Ok on my rogue I went through the whole process when it was current.

Recently on my paladin I'm doing the maw skip.

After completing that any new character can go straight into picking a covenant?

Sorta you have to do a small quest where you talk to each covenant rep by that main story hub and then when you choose it sends you to the specific one

It’s kinda obvious though, time stops when you hit oribos and it asks you if you wanna skip or do the story
