As a tauren is hard to say what headpiece would fit you better, I'm using a defias-like head piece in black, and a black belt so i can fit a tabard without it disappearing below the belt
Best tabard imho would be the isle of conquest tabard, which is hard to get.
As for daggers those are good enough, I'm lucky to have red tinted ghostblades
And tbf @manic horizon, the red set looks way to good.

During S1 i heard somewhere that the catalyst would still be useful for S1 gear even in S2. For transmog purposes, but i can't point you in the right direction

That's the bigger thing that's funny about this IMO. I remember when the T3 stuff got added to the BMAH and folks raged about how it was going to kill the "prestiege" for the people who earned it in original Naxx. Now they're adding a new way to get it and the folks who bought it on the BMAH are upset for the same reason. Time is a flat circle.
And FWIW I have the full set that I bought off the BMAH during mop, I just don't give a shit if other folks can get it easier now because prestige items in a MMO are dumb

The dungeon sets from BC being recolors of previous raid tier was always a nice touch, allowing a rogue to equip a Druid set or a warrior to equip a paladin set.

If you mean no longer obtainable, then yes. The mage tower versions are locked behind a certain achievement which is no longer obtainable sadly. With the direction blizzard is going however I wouldn't be surprised if they are brought back at some point

the chestpiece is a cloth chest cosmetic that you can use on any character
you have to pick it up as a clothie but it unlocks for all armor types
boots are from the phoenix transmog set, been looking for ways to use individual pieces in other sets
the gloves are from the DH aberrus set, they drop as a BoE in raid and show up without clipping with that chest piece
the "sleeves" are from the chest piece
the gloves normally show up like this but the armor gets hidden by the sleeves, leaving the claws, which I thought was interesting

the green is too dominant, as well as the black. most of the other pieces have green highlights and are not mostly green like the tabard - hence the tabard clashing with the rest of the set. People always like to show off their TCG tabards but they are very rarely used in a good way to compliment a transmog. Most of the time the TCG tabards are tacked on
most likely: no tabard, there are nice chest pieces that fit the theme of the transmog. if you insist on a tabard, go with something like revendreth

if you have decent pve gear you can try to play with that as well

T3 crafting system won't be fun for some since only those who obtained the t3 achievement can actually craft the required items. Although those can be put in workorders. But still, a gold sink incoming
