it was pointed out it might have something to do with the apostrophes but I'm not sure why it would be doing that. Anybody know any settings I could mess with?

I swapped back to the default font and it didn't happen so I'm guessing it's font specific

It is the apostrophe for some reason. You might just have to choose a different font.
Also, changing this property won't fix the problem of the words being shifted down but it will make it so the words don't move while it's in the middle of being written out
