Looks like your VPS is an LXC container, which unfortunately is not generally supported by Docker. Type systemd-detect-virt to double-check, and should you continue receiving random mount/target errors, this is the cause.
I started the Minecraft server once, but then I couldn't switch to Forge and the version.
The errors found are caused by the Forge installation.
Adding some scripts from GitHub, e.g., Forge, etc., causes 500 errors.
Adding other Java versions causes errors.

you have to set extra features for lxc in proxmox for docker to work properly
or just switch to kvm
and it seems to be working already, so maybe read what the console says next time?
I'm just saying what is supported on documentation. If you read the console you wouldn't need help
