I was just wondering how much ram and cpu the panel by itself uses - eg how much would you normally want to set aside for just the panel. I was thinking that instead of getting a 16gb vps and using ptero off that I might rent a seperate 2gb ram 1vCPU vps for the panel and add the 16gb as another node so that if I end up needing to transfer hosts or anything I don't have to set the panel back up again.

Depending on your size, 4gb 1-2 vcores would be PLENTY
the smallest vps has 1vCPU core and 2gb ram
Oh and would it make more sense to run servers off two vpses with 16gb ram and 8 vCPU cores or one dedicated machine with 4 dedicated cores and 32gb ram?
If you have a reason for isolating them, 2 machines = more isolation.
If you don't have a reason for isolating them, 1 machine = less overhead.
