What would the process be to set a custom install location for the panel? Is it literally as easy as just replacing "var/www/pterodactyl" with whatever location you want? or is there more to it?

It's that simple, but you'd have to do it in a bunch a steps paying close attention to the files you're making including the service files.
It may be easier for you use case to just use #panel-in-docker

I use a different web service other than apache/nginx, and i also use a custom control panel to manage sites/ssl/etc, so my sites arent hosted in /var/www. Docker might work, thank you again!
