I'm doing some quest where Taygedo is trying to woo some girl, and I'm just bored out of my mind, can someone tell me if there are any actual main plot story hooks that I might miss if I just skip past most of the quest?

There are virtually none that i can think of. I share in your distaste of the Taygedo focus in that quest.

I don't really find it all that annoying, I just find it boring. There are so many things to do in the game, and it's supposedly a main story quest, but as far as I can tell it's just filler and a waste of time when I'd rather be doing something else if there are no actual main story plot hooks involved.

Episode 3 onwards and the spinoff quests are where you need to pay attention

Especially the Pawn Moonlight spinoff quest. Do that before episode 3.

i know our affiliation with Eidon and who we are as well as the premise of the game and the quest regarding people’s wishes and the dog and all that everything else i’m just kinda blanking on. A summary of the lore and how it connects together would be really helpful

After we were assigned to eibon, a photoghraphy store commissioned us to investigate the anomaly happening there. Then we solved it by fighting the film anomaly(i forgot it name)but it looks like film tape or something. After that is taygedo's date, he basically told the girl he was the boss of eibon, and then they will have a date. We bought gift for her, imaginadough(its dough consistency that eill turn into something you imagined, but the texture will always be of a dough)and other gift, like flower. Then the date started, nanally and sakiri pretended to be a enemy of eibon and then we fought them(you saw a naruto reference there). At the last destination, taygedo used a bunch of imaginadough to make a statue of the girl(tako is her name) but it became hostile and we fought it, btw imaginadough is an anomaly. After that, jenson asked us to accompany them to an auction to verify if the anomaly object is legit. But hotori tagged along, so we need one more invitation, so we asked a guy to make a copy of it, and then we went to a signing or handshaking event for someone famous to synchronize the invitation(basically to make it look real). After we synchronize it, we went to the auction house we bought some other stuff but when the target object was introduced, the time stopped, the thief used cheesy(an anomaly) to stop time. Then hotori made us and the others able to move while the time is stopped. Then the other anomaly's in the auction got out, and then we contained them.

My friend invite me to play so i cant do the 4 and last chapter, but what ive said so far is from chap 1 to 3

||renee doesnt want the immortality back, she willingly gave it away, even if manipulated. And after finishing it, you get another cutscene about her ending if you interact with a root of the sakura tree. I will post spoilers below from this so if you didnt see the ending i highly recommend doing so.||

||Renee gave away her immortality and was given two options: live as a human and die or be protected from the debt collector, she chose the first one and then she spent the whole day going out and eating snacks and etc, then passed by the tree once again. Time progresses as you watch the dialogues, and after the last dialogue, if you check the time system, it will show 9pm, so its implied that those were her last moments||

(I'm not sure if Japanese is the original language the game is written in, and even if it's not I'd imagine the translation would be more accurate in JP)

They could acknowledge MC moving out of Eibon, having made enough money to acquire their own apartment to move into now. Problem is if they did that then you'd have the issue of what about folks who haven't bought any of the properties yet? What about folks that never buy the apartments for what ever reason, or at the very least had not bought any up to the time they do a story quest that acts like they did.
