From what i've seen you get 240 stamina/day and consume 40 on activities that require it. There is an option to use 3x the stamina for 3x the rewards. There is also a separate stamina system that resets weekly. I do not know how much those activities cost or what the cap is.

You can, but there are also things like Car skins and character skins that are tied to that character's banner only

Character pity transfers to every banner. The skins are stuck to that banner and carries over to the rerun
