I am trying to install Silverblue and secureblue in VM but why there is Fedora CoreOS after installing sb ?

the previous deployment will fall off on the next upgrade

I didn't know it works like this for Fedora Immutable. So it's normal

During secureblue installation ? I don't remember being asked if I want to install a server image. Only zfs, nvidia and namespaces

the only explanation for the coreos deployment is that yes was selected the first time you ran it
